Colombia Ibagué Rio Combeima

Raw sugar sweetness with molasses hints, notes of green apple, herbal hints, plum wine and moderate citrus-like acidic impression.

Rio Combeima runs North from Ibagué, the canyon it’s carved out splits the mountain in two. The two coffee communities that make up the Combeima blend – Machín and China Alta – occupy the east and west sides of this river and are hubs for a new Tolima buying project that Sweet Maria’s is a part of. They offer to pay farmers a premium for the opportunity to separate out coffee that meet a particular quality target, coffee that would otherwise be sold off for much lower, base prices and blended away as large Excelso blends by the local associations.

A fragrance of candied nut and caramel escapes the ground coffee, on subtle dehydrated fruit notes too, but nothing so overt. The fruited smells are more pronounced in wet aroma and fold into brown sugar sweetness with a smell of fruit cake. Combeima makes a delicious cup, raw sugar sweetness with molasses hints give way to a flavor note of green apple. Mouthfeel is a little tannic like iced tea and accompanied by a mild citrus-like acidic impression.
