Mexico Organic Chiapas Sierra Mariscal

Molasses sweetness, bittersweet, cocoa powder, tamari-like savory/sweet hint and balanced roast flavors.

The Sierra Mariscal region butts right up against the Guatemalan border, both positioned in the Sierra Madre de Chiapas mountain range and benefiting from the range of altitude, micro-climates, and nutrient rich volcanic soil. Within Sierra Mariscal is the town of Motozintla, which is where this coffee is from. 

The coffee comes from a 500 person cooperative in Motozintla, who have gone through the process of USDA organic certification. The coffee farms are at 1500 meters above sea level on average and you still see a lot of Typica planted on coffee farms, along with Bourbon, Caturra and Catuaí.

We found this coffee checked off boxes for chocolate bittersweets, body and nutty roast tones. The dry fragrance has a bittersweet and savory-sweet aspects, like cocoa powder, tamari sauce. Wet aroma smelled much sweeter and like molasses. The cup flavors show some aromatic molasses notes as well.
