Syrupy smooth, vanilla, dark chocolate

Bali Blue Moon has been a well-known “secret” among coffee roasters. It is a coffee growing region that has been heavily regulated by government, which may seem like a bad thing, but it means that both the quality of the stock used, the handling, and processing are excellent. This coffee is organic certified by USDA, and Rainforest Alliance certified.
After a devastating volcano blast in 1963, the Balinese government revitalized their coffee agriculture and economy by handing out coffee seed stock to local farmers and encouraging an island-wide coffee growing campaign. Today, there are over 7,000 hectares of organic coffee growing farmland in Bali, Indonesia. Pesticides and chemicals are illegal to use on any of the crops, which are farmed using 100% organic fertilizers. Improved coffee growing practices have only increased the worth of this remarkable Bali Blue Moon coffee, as well as improving socioeconomic conditions across the entire island nation.
The soil in this region imparts distinct flavors because of the proximity of Ganung Agung volcano. The farms are organized into co-ops known as Subak Abian. Subak are irrigation systems developed by Hindu priests over 1,000 years ago. The priests believe in Tri Hita Karana in which prosperity is attained through good relationships with the environment, God, and others. Subak Abian are environmentally sustainable and economically cooperative.
Taste Notes
A coffee that is smooth and somewhat syrupy in the mouth. It has an anise flavor which adds spice to the dark chocolate and vanilla bean flavors. It is a tad sweet and very complex. All of this means that it has gone beyond previous comparisons with Kona. It has a wonderful sensation that may vary a little with different roasts to include citrus notes, since these trees are often shaded with orange and tangerine trees.
