Dominican Republic Organic Ramirez Aged Natural

Heavy aromas of strawberry, cherry, and cedar with a fermented flavor of a Madagascar chocolate bar and funky ripe stonefruit.

This new Dominican Aged Natural is from the Ramirez Estate. Cafe Kreyol, in collaboration with Eddy Ramirez, together did a 24 hour fermentation on the coffee cherry, and dried on raised beds for roughly 15 days. Then, the coffee was stored as parchment coffee normally would be for 12 months. During that period, the coffee seed both absorbs fruit flavors and the cell walls become extremely stable, preventing the type of coffee aging that we are used to.

As with other coffees from the Ramirez Estate, this entire project is both environmentally and socially conscious. Ramirez uses fermented coffee cherries to create a gas that partially powers his facility. All water used to wash coffee is filtered before returning it to the land, and he uses natural shade with trees that create nitrates for the soil on his biodiverse farm. In 2020, the first lady flew in to meet Eddy Ramirez and nationally congratulate him on producing the highest scoring coffee that has ever come out of the Dominican Republic. The Red Honey from Ramirez scored 92 in the Coffee review, and was #22 in the top 30 coffees of 2020. Ramirez Estate produces amazing coffees, and this is one to try!!
