Citrus, caramel, and milk chocolate with bright acidity and a creamy body.

This Organic Colombian comes from the ASOBRIS producer association (Asociacion de Productores Agricolas Ecologico y Pecuarios Brisas del Quebradon) from the regions of Tolima and Planadas. The association is small with 42 current members. These producers have gathered together and worked towards finding new markets for these coffees and improving social conditions for their members and communities. They are also working to increase the productivity through new agricultural practices with sustainable options. They are cultivating these varieties between 1,500- 1,800 masl. After the coffee cherries are depulped with a machine pulper they are fermented for 18- 24 hours. After they have fermented, the beans are washed, wet milled, and dried on patios for around two weeks. After the initial drying, the beans are dried again for a short time in solar dryers to ensure consistency.
Asobris achieved organic certification in 2018, and FLO certification in 2019. They have a strong focus on the ecological and environmental impact of their production and strive to continually make sustainable improvements in this space. Asobris is committed to improving the livelihoods of those farmers who are involved in the movement both through upskilling, infrastructure and ensuring the benefits of the co-operative are shared around.
The ecosystem around the volcano Tolima is not only rich with volcanic soils, but the dramatic changes in temperature ranges from 90 degrees F to below freezing in one day. At lower elevations, these changes make for amazing growing conditions for coffee. Even after 4,000 years since the last volcanic eruption in Tolima, the soil is still filled with nutrients like potassium, nitrogen, and Boron (which is important for strong cell walls and production of flowers and fruit) which contribute to the yield of coffee trees. Volcanic soil is very beneficial for coffee production. It soaks up and holds moisture while it also helps drain pools of water around coffee plant roots that can be destructive to those roots. Since volcanic soil is normally found on an incline of a mountain, drainage happens organically.
