pleasantly-mild cup profile, clean sweetness, praline nut, apple-like acidic impression (light), rye toast, and cocoa bittersweets when roasted dark.

This custom decaf is a blend of 2 single producer coffees from Costa Rica’s West Valley region. As non-decafs, their coffees tasted clean and sweet and so no surprise the decaf returned to us fairs much the same. Both coffees were processed at Helsar de Zarcero, a mill we’ve worked with just about as long as we’ve been buying direct from Costa Rica! Helsar have always had an eye on quality improvement a conservation, being organic coffee farmers themselves. They employ a water conserving Penagos demucilager for washing the coffee, and then dry the wet parchment on covered patios, and raised beds, depending on the quality.
This decaf blend is an impressive coffee, and testament to the job well done by the folks at Swiss Water. We’ve been sending our coffees to Swiss for decaffeination for a few years now, and are continually impressed with how much of the original profile is retained after processing. “Water process” is as clean as it sounds, using only water to swell the beans and separate out the caffeine, leaving much of the volatile compounds that affect aroma and taste intact. After all, decaf drinkers should enjoy high quality, fresh tasting coffee too, and this lot lives up to that expectation!
