Finca San Jose is the story of the Third Generation family of coffee innovators committed to preserving the great coffee traditions of the Caldas region of Colombia, while developing unique, exciting products with global appeal. Their Rum Barrel aged coffee is a perfect example of innovation meeting tradition.
The coffee is cultivated between 1350 and 1470 meters in the Finca San Jose. This coffee plant enjoys an area rich in ash from the Nevado de Ruiz volcano, with excellent sun exposure and an average temperature during the year between 21° and 25°.
This special coffee came about when one day, the owner of Finca San Jose, Ms Monsalve Botero, decided to try and ferment green coffee beans in a oak barrel which was used for fermenting red wine or Bourbon. Coffee cherries for this product must be extremely ripe (purple colored). They are hand-selected during a late harvest. After washing and sun-drying, the coffee cherries are then placed in the barrels made of Colombian oak and stored for 3 months. The process will give the beans an intense winey fragrance and flavor notes, and a sweet, smooth, aromatic finish.
