Broad low tones, unrefined sweetness, and just a hint of acidity. Molasses, sorghum and corn syrups, notes of tobacco and roasted barley in the aftertaste.

This wet process coffee was purchased from a milling operation located in Ermera District of East Timor (“Timor Leste”). More specifically, this particular lot is made up of coffees from small coffee producers in the nearby region of Aifu, within Ermera.
The farms in this area can reach as high as 1700 meters above sea level, and the typical varieties cultivated are Timor Hybrid types and Typica. Most of the coffee processed in Timor is wet process, where fermentation is used to remove much of the coffee fruit, the coffee laid to dry in its protective parchment layer. We found this lot expressed pleasantly bittersweet cup profile that’s well suited for middle roasts, on up to 2nd Crack. It’s the kind of coffee that pairs very well with milk, and qualifies for espresso too.
