The Canet Estate is a highly specialized coffee farm located in the Tarrazú region of Costa Rica, specifically within the Dota subregion. It is most famous for its Musician Series, which has gained global recognition for its experimental processing methods and unique flavor profiles named after classical composers.
Canet is a pioneer of the Raisin Honey process, a two-step hybrid fermentation method that defines the Musician Series: Initial Drying: Freshly harvested red cherries are sun-dried on African beds for about 3 days until they resemble raisins. Mucilage Fermentation: The skins are then removed (de-pulped), but 100% of the mucilage (pectin) is retained for a second fermentation stage. Result: This method preserves a higher sugar content and results in a winey, syrupy body with intense floral and dark fruit aromas.
