This is a Hong Kong craftsman approach to coffee roasting.

LCC roastery starts from a hobby roaster – Ringo Lam. The new journey of coffee beans roasting began in 2017, when the craftsman roaster got more serious about the hobby. He turned the vacation home in Cheung Sha into a coffee roasting workshop. Also, he began the international trip for coffee classes from San Francisco, Panama, Taiwan, Denmark, Italy to London and finally bringing all the coffee knowledge back to Hong Kong. The enthusiasm towards coffee makes him always focus on the quality, tasting experience and more important, the story behind.

The early LCC Roastery is a personal coffee roasting workshop serving the neighbourhood community. The experience led us moving forward to expand the community from an Island to all the coffee lovers in Hong Kong. In our brief, serving good quality is a base and we aim at bringing the full coffee journey. We are happy to let people speak the coffee language and find their perfect cup!

Coffee Beans Sourcing

LCC perfers direct trade rather than fair trade while sourcing.

Every coffee bean comes with the story of the people that grow, harvest and process it, along with how we roast it. That’s why we prefer direct trade rather than fair trade. By sourcing coffee directly from farmers around the world, we can ensure the real ethical  and with high traceability. While selecting the coffee farms and coffee beans, we usually  choose the Arabica coffee beans with a cupping score in between 85 and 90. In this range, the coffee beans are generally not only good performance in a single bitch but a sustainable quality continuously. See our coffee bean menu

Coffee Roasting

Craft roasting practice is performed when we are roasting, craftsmen hand-pick to screen out the coffee beans which are not qualified.

When the green beans arrive at our roastery, we prefer to keep them green instead of mass production. The LCC roastery coffee is roast-to-order, making sure it’s super fresh. In other words, we are going to give you the longest period of time to enjoy the coffee bean and taste its original. “Craft roasting practice” is performed when we are roasting, craftsmen hand-pick to screen out the beans which are not qualified.  As a result,  premium roasted coffee beans ready for brewing.
