Luis Anibal Calder

This coffee from Luis Anibal Calder is unique and luscious, displaying the very best that Huila, Colombia has to offer. Anibal Calderon is having a bigger farm in Colombian standards. It’s located in Acevedo-Huila with different blocks of different cultivars in altitudes from 1400-1800 masl. It’s a family operation and his son is also producing coffees at the neighboring farm. The farm is called El Vergel and is situated in the municipality of Primavera.

Luis has been growing coffee for over 30 years now and in that time has had an almost obsessive approach to acquiring diversity in his coffee varietals, Luis now grows over 35 different varieties on his farm! Luis and Cofinet have worked closely together to develop innovative processing techniques that differ from the ordinary”norms”of a lot of growers in chasing an enhanced profile of sweetness and clarity.

Processing Method

Coffee cherry was picked following a strict ripeness criteria and hand sorted. Cherries were left to ferment inside plastic tanks for 48 hours adding CO2, later remove half of the mucilage then left to dry on raised beds below 35 degrees celsius until ideal moisture content was achieved.
