Ethiopia Washed Yirgacheffe Banko Gotiti G1

Classic and super clean washed Yirga profile of citrus fruity tone. Higher acidity with some pretty strong acidity and floral tones at the lighter roast points. The acidity mixing with a bit of a fruit tones almost gives it a tropical note in the taste.

Our coffee come from the tiny village of Banko Gotiti, near the town of Kochere – itself in the region of Yirgacheffe. Yirgacheffe is a steep, green and fertile area of Ethiopia and most of the coffee is grown at 2000 meters or more above sea level. The region is both thickly forested and heavily populated with many smallholders growing what is known as “garden coffee”

700 coffee farmers deliver ripe cherries to the Alemu Bukato’s washing station where they are carefully sorted, depulped, fermented, washed, and then placed on raised beds designed to ensure proper air circulation and temperature control for an optimal drying process. Coffee is turned regularly on the beds to prevent damage during the drying process. Coffee is stored in a local warehouse after the moisture is reduced to between 11.5 and 12 percent. Then the beans are transported to Addis Ababa, the capital of Ethiopia, to be milled and bagged prior to export.

The local washing station run by Alemu Bukato, where it is sorted, graded and processed. Mr Bukato’s commitment to the coffee community is huge, from financial, to road construction to planting trees. Mr. Bukato does it all, and his passion and heritage are in the cup.
