The farm Finca Los Suspiros is a joint effort between Axel Palacios and Fredy Morales in the town of San Gaspar Ixchil. You may recognize Fredy’s name from his family-farm in San Pedro Necta, Finca Rosma. He is also the central person in Huehuetenango who has helped to make Sweet Maria’s Proyecto Xinabajul a success by spreading the word about our project and managing all of our buying in the region.
“Los Suspiros” means “the sighs”. Los Suspiros is mostly planted in Caturra and Bourbon and they are producing washed, honey and natural process coffees. This is a full honey-process lot, which mean a sizeable amount of mucilage left on the seed before sun drying. Altitude at Los Suspiros starts is right around 1800 meters above sea level.

True to the process-type name, the dry fragrance kicks off with impressive honey-sweet smells, light and clean, along with buttery florals and a golden raisin hint. The wet grounds have an aroma of ‘baked goods’, like peach scone or bran muffin, with dried fruit. stone fruit and roasted sunflower seed accents atop creamy honey sweetness underneath. For honey process, Los Suspiros shows convincing level of acidity that impresses and imparts apple-like vibrance on the cup profile.
