Finca Villa Betulia is located in Acevedo,southern Huila. Coffee grown here is on soil made up of volcanic ashes and clay foam. Though not as high an altitude as other farms in Huila, day temperatures at Finca Villa Betulia are slightly lower than average, leading to a slow coffee cherry maturation that increases sugar content in the fruit and a sweeter cup profile-a similar effect that higher altitudes have. Luis has been growing coffee for over 30 years now and in that time has had an almost obsessive approach to acquiring diversity in his coffee varietals, Luis now grows over 35 different varieties on his farm! Luis and Cofinet have worked closely together to develop innovative processing techniques that differ from the ordinary”norms”of a lot of growers in chasing an enhanced profile of sweetness and clarity.

Pink Bourbon is a hybrid of Red and Yellow Bourbon, this varietal stands out for its pink colour of its ripe cherries and the sweetly complex flavor. Pink Bourbon is challenging to cultivate, farmers must isolate their crops to encourage successful cross-pollination. Harvesting also requires extra attention, pickers have to look for subtle colour nuances that separate underripe cherries from mature ones.

Huila is part of the Andean region, where Pink Bourbon was first discovered (Cafe Imports: Pink Bourbon – San Adolfo). Coffee from this region are balanced and complex with a high valuation of their acidity.
