caramel-almond note has a confectionary quality to it, accented by subtle lemon peel top note, and underlying chocolate roast bittering that’s well-balanced.

Fredy Vasquez’ farm is located in the Lempira sub region of western Honduras. His farm is situated near a fresh water source, the Quebrada Honda (often spelled “Onda” since the H is not pronounced), with coffee planted between 1400 and 1600 meters above sea level. He is mostly growing Catuaí, a cross between Caturra and Mundo Novo, the latter itself a natural cross of Bourbon and Typica that occurred in Brazil.
The region of Lempira gets its name from the indigenous Lenca chief who in 1530, defended the region from Spanish conquistadores. The Lenca people still inhabit this part of Honduras, tucked in the shadows of both the Celaque mountain and Pacavita volcano. “Lempira” is also the name of a disease-resistant, high yielding coffee hybrid, produced by the Instituto Hondureño del Café (IHCAFE). But you won’t see that cultivar at many farms in the region.
