Mandarin, lemongrass, earl grey tea

Grown by Rafael Amaya at Finca La Virginia in the Timana region of Huila in the southern part of Colombia. Rafael Amaya has been producing premium specialty coffee since 2010 and over the last five years he focuses on growing and harvesting single varietal microlots and has been experimenting with unusual processing methods.
Rafael Amaya has spent years experimenting with so many fermentation methods and comparing tasting them at different stages. This particular microlot of Castillo was hand-picked at peak ripeness, the coffee is first floated and hand-sorted and carefully picked only the fully ripe cherries. After plugging, washed, the coffee is fermented together with mandarin for over 100 hours.
