Yirgacheffe is one the most loved regions by Hong Kong people, probably don’t need much write much to introduce this region. But honey processing technique is not heard much from the region, although it’s getting very popular around the world.

This method is a hybrid between washed and natural processing, where the coffee cherries are depulped but retain some of the mucilage during drying. This results in a coffee that showcases the natural sweetness of the fruit while maintaining a clean flavor profile.
