Sourced from the renowned Guji Zone in Ethiopia, this coffee offers an exceptional specialty decaf experience that defies typical decaf expectations. Created primarily from natural/dry-processed, fruit-forward lots, this offering retains the vibrant origin characteristics, juicy fruit notes, and complex sweetness of top-tier Ethiopian coffees.

Swiss Water Decaffeination Process (SWP)

Decaffeinated using the 100% chemical-free Swiss Water Process, the green beans are gently processed using pure water to remove caffeine while preserving the coffee’s intrinsic flavors, sugars, and delicate aromatic compounds.

Flavor Profile & Cupping Notes

  • Fragrance & Aroma: Dry grounds display notes of stone fruit, honey, tropical accents, and light floral hints. The steam delivers rich molasses, dried fruit, and spiced fruit cake aromas.
  • Flavor Notes: Peach, nectarine, persimmon filling, honey, molasses, brown sugar, and a complex spice blend including clove, cinnamon, nutmeg, and chai. Subdued undertones of rye crisps and pumpernickel add grounding depth.
  • Acidity & Body: Attractive, bright fruit acidity (especially in lighter roasts) balanced by a rich brown sugar backdrop as the cup cools.
  • Finish: Long, sweet aftertaste with lingering stone fruit and warming spices.
