About This Coffee

We are proud to offer Nicaragua Mierisch La Huella Yellow Pacamara Washed — a standout variety from the renowned Fincas Mierisch family at Finca La Huella in the Matagalpa region.

The Mierisch family has been producing coffee in Nicaragua since 1908, spanning five generations. Their story began when German geologist Bruno Mierisch Boettiger received land as payment for his work on the national railroad. Today, the family operates multiple farms across Matagalpa and Jinotega, with a strong focus on innovation, sustainability, and exceptional cup quality. Dr. Erwin R. Mierisch (3rd generation) and his family, including 5th-generation producer Erwin Mierisch, continue to lead the operation with a passion for specialty coffee excellence.

Finca La Huella, one of the younger additions to the Mierisch portfolio (acquired in 2014), spans 76 hectares at 1,315 – 1,400 meters elevation in the El Arenal Natural Reserve. The farm benefits from rich volcanic soils, cool nights, misty mornings, and a microclimate that allows varieties like Yellow Pacamara to thrive with more sunlight exposure due to fewer shade trees.

The Yellow Pacamara itself is a rare natural mutation first discovered by the Mierisch family in 2004 on their El Limoncillo farm. It features exceptionally large, dense beans and delivers outstanding complexity. Under the careful management of farm manager Denis Morales, this washed lot highlights the variety’s clean profile, elegant structure, and vibrant fruit character.

Flavor Profile

Cupping Notes: Bright and fruit-forward with sweet peach tea and lemon citrus leading the way, followed by tart cherry, caramel, and toasted almond. The washed process gives a clean, juicy acidity with a smooth, viscous body and a sweet, lingering finish.

Recommended Roast: Medium-Light to Medium (Agtron #70-58). Excellent as filter (V60, Chemex) or espresso.
